Justin Gill calls his grandmother bachan, shorthand for the affectionate Japanese obachan, or little aunty, and she taught him how to make this teriyaki-like sauce. Bachan’s uses the sweet rice wine called mirin and soy sauce, both from Japan, with fresh ginger and green onions to make a slightly sweet, umami-rich sauce that’s good on almost anything. To this he adds a healthy dose of fiery jalapenos, kicking things up significantly in the heat department. Brush it on grilled chicken or salmon, drizzle over vegetables, or add some to simple bowl of rice.
